2nd Hunting Festival at Le Chambard in Kaysersberg

The 2nd edition of the Hunting Festival is over, and took place from October 15 to November 17, 2024.

Come and celebrate the culinary and cultural traditions of hunting in Alsace at this event, which brings together food and nature enthusiasts.

Famous chefs at the Hunting Festival

We are delighted to announce that renowned chefs, experts in their field, will be gracing the Festival de la Chasse with their presence, offering an exceptional culinary experience:

  • Joseph Viola, Chef-owner of the Daniel & Denise restaurant and MOF 2004, will be signing the menu at La Winstub from 15 to 20 October 2024.
  • Julien Lucas, Chef and owner of La Villa de Camille & Julien*, World Champion of the Lièvre à la Royale 2022, will honour us with his presence on 23 October 2024.
  • Benjamin Chmura, Executive Chef of Tantris Restaurant** and Tantris DNA*, will take part in the gala dinner on 5 November 2024.
  • Gilles Reinhardt, Executive Chef at the Paul Bocuse restaurant** and MOF 2004, will also be attending the gala dinner on 5 November 2024.
  • Olivier Couvin, Chef at the Paul Bocuse restaurant** and MOF 2015, will be honoured to take part in the gala dinner on 5 November 2024.
  • Fabien Pairon, Chef at L'Auberge Communale and MOF 2011, will sign the menu of La Winstub around game birds.
  • Christophe Felder and Camille Lesecq, co-owning pastry chefs at Les pÂtissiers, will be creating the desserts for the gala menu.

As well as these prestigious chefs, there will be a host of other surprises and famous guests, promising an unforgettable second edition.

Olivier Nasti and Dom Pérignon have joined forces for an exceptional dinner on the theme of ‘Hunting and Champagne’. 
For this prestigious occasion, Chef Olivier Nasti has concocted a menu filled with products from the finest autumn hunts, paired with exceptional champagne vintages.
Thursday 31 October 2024 - Menu at €695 per guest, including food and champagne pairings.

The Gala Dinner

Let yourself be swept away by a magical evening, where tradition and haute cuisine meet for an exceptional gala dinner. Five renowned chefs will orchestrate a sensational menu based around game. The culinary creations of Olivier Nasti, Gilles Reinhardt, Olivier Couvin, Benjamin Chmura, Camille Lesecq and Christophe Felder
promise a symphony of refined and daring flavours.
The dinner will be enlivened by the majestic sound of hunting borns and a bonfire will light up the evening.

At the Winstub du Chambard, game takes pride of place with an exceptional Hunting Menu, renewed each week by Chef Olivier Nasti and a guest chef.

This unique menu begins with a refined appetiser, followed by a delicate starter, a main course, a cheese platter, and finishes in style with a gourmet dessert. For a complete culinary experience, a wine and food pairing is proposed to enhance each dish.

The Festival de la Chasse was created by Chef Olivier Nasti in 2023 to honor the highly prized hunting territory on which Le Chambard is located, the Chef's estate situated between vineyards and the Vosges mountains. A hunter for 15 years, Olivier Nasti offers Chambard local meat, hunted by himself or his family, to guarantee outstanding taste and nutritional qualities.

At the height of the hunting season, we welcome you to a forest immersion where the whole house is decked out in hunting colors. From the uniforms worn by our staff, to the hunting trophies that will adorn the Chambard, to the various partnerships with professionals from the hunting world... Everything has been designed to immerse you in the world of Chef Olivier Nasti.

The Hare à la Royale honoured at Le Chambard

Taste The Hare à la Royale, the jewel of French cuisine, during a meal at La Winstub or at Olivier Nasti's Table. This dish, renowned for its elaborate preparation and refined flavour, embodies French culinary excellence.

Mathieu Silvestre, second chef at Le Chambard, was crowned World Champion of Lièvre à la Royale in 2019 and will be sharing his expertise during a masterclass in the Chambard kitchens. Two days later, Chef Olivier Nasti will proudly chair the jury board for the Championnat du Monde du Lièvre à la Royale.
